Many people ask why they should lay down wine. In my opinion, wines that should be laid down for several years are small production wines that need to age a bit or wines that are a new vintage. These wines usually have a high alcohol content 14 percent or higher. Pinot Noirs also age especially well, however, most are 12 to 13 percent alcohol content.
Aging wines takes a little bit of attention during the laydown process. The bottles should be rotated 1/4 turn every month to keep the cork evenly saturated so as not to dry out. Keeping a close watch is important in preserving the integrity of the wine.
